Chicken and Caramelized Pineapple Pizza

Pizza is one of my favorite homemade dinners because it doesn’t require a recipe. It’s really hard to screw it up, there are endless combinations to try, and you often end up representing several different food groups in one dish..

This was a combo I came up with after looking in my cart at ingredients I was already buying for other meals. In the future, I think this recipe would be even better with barbecue sauce or caramelized onions added.


  • 1) 1 package of whole-wheat, pre-made pizza dough (Pilsbury or other--my grocery store sells plastic bags of it as well)
  • 2) ½ jar of pizza sauce (14 oz) (Tip: look for one with low sugar. Pizza sauce shouldn’t be sweet anyway, and sauces can have a lot of sugar sneakily added)
  • 3) 1 ¼ cups mozzarella cheese
  • 4) 1 large boneless, skinless chicken breast
  • 5) 1 can of pineapple, OR ¼ of a fresh pineapple, diced (I used fresh)
  • -1 ½ teaspoons sugar (white or brown) (optional)
  • Olive oil
  • Salt, pepper, and garlic powder


  1. 1. Cut the chicken into bite-sized pieces and season with spices. Drizzle just enough olive oil to cover a pan and add the chicken, cooking until browned. Remove chicken from pan and set aside.
  2. 2. Add more oil to pan if necessary, and add the pineapple, sprinkling the sugar over it evenly. Cook on high heat until brown and caramelized.
  3. 3. Spread pizza sauce, cheese, chicken, and pineapple evenly over pizza. Cook pizza as instructed on pizza dough package.
