-Whole Wheat Tortillas (I like Maya’s brand, they’re a medium size and only have 90 calories per tortilla)
-Pizza or spaghetti sauce (I like Prego 100% natural pizza sauce) – 1 small jar will make about 10 pizzas
-Shredded Mozzarella cheese – 1/4 C per pizza
-Jennie-O turkey breakfast sausage (or use plain turkey burger for lower fat, the sausage has more flavor, you can season the turkey burger with your own seasonings if you’d like) I would figure about 4 oz. per adult, this will cover 2 tortillas, or you can eat only one tortilla with the extra meat on the side (in order to get all your protein in).
-Sliced olives (1 small can will cover about 3 or 4 pizzas)
-Fresh Baby Spinach – chopped
Heat oven to 375. Heat a skillet to medium-high heat, spray with cooking oil, heat your tortillas if you like them crispy, heat both sides until a little browned or crispy.
Place tortilla on baking sheet, spread a spoonful or two of pizza sauce on the tortilla. Spread 1/4 c shredded mozzarella cheese. Add toppings, turkey, olives, chopped spinach. Bake in oven until the cheese melts – approximately 5 minutes.
Optional: Add any other veggie toppings, such as chopped broccoli, sliced tomatoes, sliced mushrooms, etc., whatever you have in your fridge.
**One tortilla pizza, using 4 oz. of meat (some may have to be on the side if it is too much for the pizza) – has 418 calories, 25g carbs, 20g fats, 39g protein. Only 2 grams of sugar – from the pizza sauce. (1,720 g sodium)
